What is the best method for mounting hooks and paper towel racks on the backsplash area in the galley? Adhesive? Screws? What kind/size do you recommend?
I would suggest maybe 3M Command Hooks (see photo)
Clean the surface as instructed.
For paper towels, I would investigate racks which can hang from cabinet door below sink. (see photo)
You may wish to place some tape on metal parts which contact the cabinet.
I would avoid travel with the rack hanging from the cabinet door.
Make sure the placement does not interfere with the hatch.
» Whatever chosen, remember not to hang or place things flammable near the stove burners.
@nichutchy4 we had a 2017 which had a solid piece of wood perfect for screwing into...we had a couple of magnetic knife holders that were awesome..think it was a 5/8" #2 robertson that I used...

I have used the 3M hooks from hanging my curtains to hanging pots & pans. So far they have worked well. I would recommend though rubbing the surface with some rubbing alcohol.

The wood sheet making the back splash is about 3/8 thick, so plenty sturdy. Just used screws that aren't too long and you are fine!
