Microwave convection oven

I have a 2018 T@G Boondock teardrop with the outdoor galley. This camper includes the Nordic cooler refrigerator and the microwave oven. I would like to know if it is possible to replace the microwave oven with a microwave convection oven and if so what would you recommend? I would also like to know what you could recommend for a tankless water heater for my camper. I am in the process of preparing myself and my camper for a long trip to Alaska. I need to be as self-sufficient as possible at the same time being as light as possible. I also have certain food allergies which requires me to cook a lot of my own food.
