Simple easy rules. You should always tow level or the trailer slightly nose down. Put a level on your trailer tongue when you're hooked up on level ground. If the bubble is out of center toward your tow vehicle, it's too high. As for tongue weight, have a 150 to 200 lb person step on the tow vehicle hitch while you watch the car height. If the trailer makes the car sag more than the person did, your tongue weight is too high. If it sags a lot, your tongue weight is way too high, move something to the back of the trailer.
Yes, its big-time over kill for a T@G but I can use it for other applications. I like Curt, its very adjustable and inexpensive at $130 (compared to other quality adjustable hitches).
My tow height varies a little bit each trip. If I'm headed out, it rides lower in the front. When I'm headed back, it flattens out. The hitch I selected gives me the ability to allow for the weight/height changes so I can tow flat.

Per nuCamp - the height to the top of the ball for the TaG Boondock is 21 inches and 16 inches for the standard TaG.
