Since I haven't taken actual delivery of my trailer yet, I have only been able to eyeball it. I am not sure if this will work. I have a bike rack I want to install on the top receiver, then have a 2"drop to accomodate the trailer coupler for the T@g. I am not sure, but I think the crank for the trailer jack (and the top part of the jack itself) may interfere with clearance when it comes to the bike rack. Anyone have one of these on their T@g and use it without any issues? Or do I need to go with another option?

It will but it reduces your TV's tongue weight capacity by half.
So if tongue weight is not an issue no problem but if its close go with the Jack it up.

Very interesting...good thing you posted that up, mgreen2. As for the Jackitup, I just spent over 400 bucks on a quality Thule rack for our two mountain bikes. I am going to have a hard time justifying another $229 for the Jackitup. It also appears as if the bikes are very close together; we have had issues with racks such as these in the past, as they caused rubbing damage to the bike frames.
The Jack it up is one piece, no need for bike rack. There are other high hitch receivers you can use a bike rack with. Jack it up was less than $150 on Amazon.
Mandy Lea has a blog entry about what she uses on her T@B and I considered it and talked to the guy that makes them but wanted a lighter weight solution. Plus it was $300 for just the receiver.

If you don’t have issues with tongue weight being halved you can use the extended hitch receiver you posted.

This way you don't reduce your TV tongue weight by half and still get the benefit. I haven't seen these in 1 1/4" though, accessories for Class1/Class2 are harder to come by.
I'm actually having my C2 switched out to C3 when I get my 7pin + 4 pin (my PWC trailer is 4pin) and brake controller installed.
